– 1 cup rolled oats
– 1/2 cup almond flour
– 1/4 cup coconut sugar
– 1/4 tsp baking soda
– 1/4 tsp salt
– 1/3 cup coconut oil, melted
– 1/4 cup pure maple syrup
– 1 tsp vanilla extract
– 1 cup fresh strawberries, finely chopped
1. Preheat the oven to 350°F.
2. In a medium mixing bowl, combine rolled oats, almond flour, coconut sugar, baking soda, and salt.
3. In a separate mixing bowl, whisk together melted coconut oil, maple syrup, and vanilla extract.
4. Add the dry ingredients to the wet ingredients and mix until well combined.
5. Fold in the chopped strawberries.
6. Grease an 8×8 inch baking dish and pour the mixture into it.
7. Bake for 25-30 minutes, or until golden brown.
8. Allow the bars to cool in the baking dish for 10-15 minutes.
9. Cut into bars and serve.
