– 1 cup fresh strawberries, hulled and chopped
– 1/4 cup white wine vinegar
– 1/4 cup olive oil
– 1 tablespoon honey
– 1/2 teaspoon salt
– 1/4 teaspoon black pepper
1. In a blender or food processor, combine the strawberries, white wine vinegar, honey, salt, and black pepper.
2. Blend until the strawberries are pureed and the mixture is smooth.
3. With the blender running, slowly pour in the olive oil and blend until the dressing is emulsified.
4. Taste the dressing and adjust the seasoning, adding more salt or honey as needed.
5. Serve the strawberry vinaigrette over your favorite salad greens and enjoy!
Note: This dressing can be stored in an airtight container in the refrigerator for up to one week. It may thicken slightly in the fridge, so let it sit at room temperature for a few minutes before using. Shake or whisk the dressing before using to re-emulsify it.
