Ingredients:
— 1 cup all-purpose flour
— 1 1/2 cups milk
— 2 eggs
— 1/4 tsp salt
— 2 tbsp sugar
— 1 tsp vanilla extract
— 3 tbsp melted butter
— 8 oz cream cheese, softened
— 1/4 cup powdered sugar
— 1 tsp vanilla extract
— 2 cups sliced strawberries
— Additional powdered sugar for serving
— Whipped cream, for serving (optional)
Instructions:
1. In a mixing bowl, whisk together the flour, milk, eggs, salt, sugar, and vanilla extract until a smooth batter forms. Stir in the melted butter.
2. Heat a large nonstick skillet or a crepe pan over medium-high heat. Pour about 1/4 cup of the batter into the skillet and swirl it around to coat the bottom of the pan. Cook the crepe for about 2 minutes, until the edges start to lift and the bottom is golden brown. Flip the crepe and cook for another minute on the other side. Repeat with the remaining batter.
3. In a separate mixing bowl, beat together the cream cheese, powdered sugar, and vanilla extract until well combined and smooth.
4. To assemble the crepes, spread a generous spoonful of the cream cheese mixture onto each crepe and top with a handful of sliced strawberries. Fold the crepe in half, then fold it in half again to form a triangle.
5. Serve the crepes warm or at room temperature, dusted with powdered sugar and topped with whipped cream, if desired.
