Strawberry Cake Recipe

Ingredients:
— 1 1/2 cups all-purpose flour
— 1 1/2 teaspoons baking powder
— 1/4 teaspoon salt
— 1/2 cup unsalted butter, softened
— 3/4 cup granulated sugar
— 2 large eggs
— 1 teaspoon vanilla extract
— 1/2 cup milk
— 1 1/2 cups fresh strawberries, chopped

Directions:
1. Preheat the oven to 350°F (180°C). Grease an 8-inch cake pan with cooking spray or butter and line the bottom with parchment paper.
2. In a medium bowl, sift together the flour, baking powder, and salt. Set aside.
3. In a separate bowl, cream together the butter and sugar until light and fluffy, about 3-4 minutes.
4. Add the eggs one at a time, mixing well after each addition. Add in the vanilla extract and mix well.
5. Gradually add the dry ingredients to the butter mixture, alternating with the milk. Mix until just combined.
6. Fold in the chopped strawberries.
7. Pour the batter into the prepared cake pan and smooth the top with a spatula.
8. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
9. Allow the cake to cool in the pan for 10 minutes, then remove it from the pan and transfer it to a wire rack to cool completely.

Optional: You can add a cream cheese frosting or whipped cream on top of the cake for extra sweetness. Enjoy!
