– 2 cups all-purpose flour

– 2 large eggs
– 1 cup milk
– 1 teaspoon vanilla extract

– 1 1/2 cups fresh strawberries, chopped
1. Preheat the oven to 375°F (190°C). Line a muffin tin with paper liners or grease with non-stick spray.
2. In a large bowl, whisk together the flour, sugar, baking powder, and salt.
3. In a separate bowl, whisk together the melted butter, eggs, milk, vanilla extract, and lemon zest.
4. Pour the wet ingredients into the dry ingredients. Mix until just combined.
5. Fold in the chopped strawberries.
6. Spoon the batter into the prepared muffin tin, filling each cup 2/3 full.
